Tomatoes!

I got a case of organic tomatoes for $1.99 earlier this week. There were several tomatoes still in good shape. Definitely $1.99 worth!

I was going to make a bunch of tomato sauce but after I chopped them up I decided to make black bean & corn salsa!

I ended up with almost 8 quarts of salsa! Yippy! The whole family loves it.

I’m going to post the ingredients but I rarely measure things, I go by look and taste. Remember organic ingredients are always better.

Black Bean & Corn Salsa:

• diced tomatoes

• red onion

• cilantro

• corn

• black beans

• fresh lemon juice

• apple cider vinegar

• Bragg liquid aminos

• salt & pepper

• surgar

Vegan Berry Muffins

black & blueberry vegan muffins

VEGAN BERRY MUFFINS

• 1 cup Un-bleached all-purpose flour

• 1 cup whole wheat flour (I use my Vitamix to make my own wheat flour by grinding organic wheat berries. Approximately 1.5 c equals 2 c flour)

• 1/2 teaspoon sea salt

• Zest of a medium orange

• 1/4 cup organic sugar

• 2-3 very ripe bananas mashed

• 1 cup nondairy milk

• 1 teaspoon almond extract

• 1 tablespoon white distilled vinegar

• 1/2 cup blueberries

• 1/2 cup blackberries

DIRECTIONS

preheat oven to 400 degrees F. Lightly grease muffin pans. I like to use the mini muffin pans. Bite size goodness!

In medium size bowl, combine the flours, baking soda, sea salt & orange zest.

In a large bowl, combine sugar, mashed banana, nondairy milk, olive oil, almond extract & vinegar. Mix well. Add flour mixture, stir until just blended. Gently fold in berries.

Fill muffin pans 1-3 full and cook for about 18-20m. Muffins are done when lightly brown and a toothpick inserted into center comes out clean.

30 Day Juice Challenge for Free!

30-Day Juice Challenge

Thank you Tracee Sloan

I’ve really really really been wanting to juice more for my health. I stumbled across Tracee Sloan’s website JuiceRecipes.com. I’ve been juicing for a long time but have not mastered making it a habit! She offered a free 30 Day Juice Challenge. I accepted! I will most likely use some of the juices she has in the challenge and add my own. She has so many to choose from. I love that she has a tab for Health & Ingredients! If you are making your own as you go and would like to know the nutrients this is great, Juice Recipe Builder!

Day 1: May 8th, 2014

FreshStart

This juice recipe is great to start with for those who are trying to ease themselves into this whole juicing thing and they’re not quite ready to drink those deep colored lookin’ juices. If you need it even sweeter, just add another apple to it.

Don’t think that just because it’s said to be a “beginner juice” means it’s not as good for you, this juice is great for you!

Ingredients:

  • Apples – 2 medium (3″ dia)
  • Carrots – 3 medium
  • Celery – 4 stalk, large (11″-12″ long)

Directions:
Process all ingredients in a juicer, shake or stir and serve.

Opinion:
You can’t ever go wrong with apples and carrots. I really enjoyed the smooth sweet taste. A great beginner juice!

Day 2: May 9th, 2014

DrOzGreenDrink

Here’s the hard to find recipe! Dr. Oz says he drinks this every morning, and so does Oprah. After Oprah tried this on the show, she was surprised how good it tasted, calling it a “glass of fresh!”

If you’re here and you’re new to juicing, you may find that this tastes a bit “earthy” because your taste buds may not be used to this whole thing. If that’s the case, just add an extra apple or two to sweeten it up.

You can blend this recipe too, but I imagine you’ll want to peel the lemon, lime, and ginger.

Ingredients:

  • Apples – 2 medium (3″ dia)
  • Celery – 3 stalk, large (11″-12″ long)
  • Cucumber – 1 cucumber (8-1/4″)
  • Ginger Root – 1/2 thumb (1″ dia)
  • Lemon (with rind) – 1/2 fruit (2-3/8″ dia)
  • Lime (with rind) – 1 fruit (2″ dia)
  • Parsley – 1 bunch
  • Spinach – 2 cup

Directions:
Process all ingredients in a juicer, shake or stir and serve.

Opinion:
This drink may not be a great beginner drink or if you only enjoy sweet juices. This is very tart but I actually loved it!

Day 14 : May 21st, 2014

BeginnerGreen

This is for beginners that are looking for a green juice that tastes great. It’s sweet while having a nice citrus flavor to it.

If you have a masticating juicer, this will come out just like in the picture. If you have a centrifuge juicer, you may not be able to get much juice out of the spinach. You can still try it, but don’t be surprised if it shoots all of the spinach in the bin and a few drops come out. You can always juice everything except the spinach, then finish it in a blender with the spinach.

Ingredients:

  • Apples – 3 medium (3″ dia)
  • Celery – 4 stalks, large (11″-12″ long)
  • Ginger Root – 1/4 thumb (1″ dia)
  • Lemon (with rind) – 1/2 fruit (2-1/8″ dia)
  • Orange (peeled) – 1 large (3-1/6″ dia)
  • Spinach – 5 handfuls

Directions:
You don’t have to peel the lemon, but make sure you peel the orange. The orange’s skin is very bitter and can ruin the flavor.

Opinion:
Thumbs up! I agree with Tracee, it’s sweet while having a nice citrus flavor to it.

Fresh Made Soy Milk

I keep scolding myself every time I buy organic soymilk in the stores. I could save so much money if I just got off my butt and made it myself. Organic soybeans are so inexpensive in the health food store. The bonus about making your own is you know exactly what is in it! No crap just great true ingredients and love!

20140126-204759.jpg

Here is my post on making homemade soymilk with the SoyQuick Milk Maker (another thrift store score):

Orange Julius Copycat

It’s late and I’m kinda bored. Then for some odd reason I wanted an Orange Julius! It has been years since I had one. So I peeled 4/5 small organic oranges and one banana. I put everything in my Vitamix and blended. These oranges are very sweet so I didn’t add any sweetener. At the end I added a handful of ice cubes.

Wow! It was amazing, smooth and creamy! It hit the spot! I looked online and all the recipes call for sugar, milk and vanilla. I liked it with just 2 ingredients. So much lighter than other recipes.

Creamy-N-Soft Cauliflower Soup – RAW!

Creamy-N-Soft Cauliflower Soup.jpg

I started from the recipe in Kristin Suzanne’s Easy Raw Vegan Soups book. A few things I didn’t have so replaced with other ingredients, also added some new ones.

Kristen’s Original Recipe:

1 cup water
2 cups cauliflower, chopped
2/3 pine nuts
2 teaspoons onion powder
3 tablespoons fresh lemon juice
1 teaspoon raw agave nector
pinch white pepper
Himalayan crystal salt, to taste

My Version:

1 cup water
2 cups cauliflower, chopped (I weighted 16 oz)
1 cup cashews soaked for 1 hour
2 teaspoons onion powder
3 tablespoons fresh lemon juice
2 large medjool dates
1 large spoon or fork full of sauerkraut
coarse black pepper
Trocomare Herb Seasoning Salt, to taste
Garnish with cilantro & sprouts of your choice

20130919-145851.jpg
Ingredients
20130919-145504.jpg
Sauerkraut & Medjool Dates
20130919-145442.jpg
Place everything into the blender
20130919-145454.jpg
Blend all the ingredients until velvety smooth!

Soak pine nuts/cashews in water for at least an hour. Add everything to your blender (vita-mix preferred) and blend until velvety smooth. You can also use the vita-mix blender to warm up the soup. Just make sure not to heat over 115 degrees!

This tasted amazing, I had 2 bowls! A girlfriend stopped by and she had a bowl too. She liked it! Yeah!
