Easy RAW Coconut Curry Soup

  
I just realized I never posted this:

I had one young Thai coconut left in the fridge, so I decided to make dinner with it. This raw vegan soup is amazing and full of rich flavor. I couldn’t believe it! So simple to make if you have a Vitamix blender. Keep blending until it becomes warm. Make sure you don’t go over 116 to 118 degrees. After 118 degrees you will start killing the nutrition and the Coconut Curry soup will no longer be considered a Raw Soup!

From Kristen Suzanne’s Easy Raw Vegan Soups book:

• 1 young Thai Coconut, meat and water
• 3 medium carrots, chopped
• 1 apple, cored and chopped
• 1 1/2 tbs red onion, chopped
• 1 tbs fresh lime juice (I used lemon)
• 1 tbs fresh orange juice
• 1 tbs curry powder
• 2 tbs coconut oil
• 2 tsp fresh minced ginger or 1/2 tsp ground
• 1 tsp Himalayan crystal salt ( I used 1/2 tsp real salt)
• 1 pinch cayenne pepper


Blend all of the ingredients until smooth and warm.

Orange Julius Copycat

It’s late and I’m kinda bored. Then for some odd reason I wanted an Orange Julius! It has been years since I had one. So I peeled 4/5 small organic oranges and one banana. I put everything in my Vitamix and blended. These oranges are very sweet so I didn’t add any sweetener. At the end I added a handful of ice cubes.

Wow! It was amazing, smooth and creamy! It hit the spot! I looked online and all the recipes call for sugar, milk and vanilla. I liked it with just 2 ingredients. So much lighter than other recipes.

Creamy-N-Soft Cauliflower Soup – RAW!

I started from the recipe in Kristin Suzanne’s Easy Raw Vegan Soups book. A few things I didn’t have so replaced with other ingredients, also added some new ones.

Kristen’s Original Recipe:

1 cup water
2 cups cauliflower, chopped
2/3 pine nuts
2 teaspoons onion powder
3 tablespoons fresh lemon juice
1 teaspoon raw agave nector
pinch white pepper
Himalayan crystal salt, to taste

My Version:

1 cup water
2 cups cauliflower, chopped (I weighted 16 oz)
1 cup cashews soaked for 1 hour
2 teaspoons onion powder
3 tablespoons fresh lemon juice
2 large medjool dates
1 large spoon or fork full of sauerkraut
coarse black pepper
Trocomare Herb Seasoning Salt, to taste
Garnish with cilantro & sprouts of your choice

Place everything into the blender

Blend all the ingredients until velvety smooth!

Soak pine nuts/cashews in water for at least an hour. Add everything to your blender (vita-mix preferred) and blend until velvety smooth. You can also use the vita-mix blender to warm up the soup. Just make sure not to heat over 115 degrees!

This tasted amazing, I had 2 bowls! A girlfriend stopped by and she had a bowl too. She liked it! Yeah!

Raw Breakfast

1tbl Chia Seeds
1 Banana chopped
1 Apple chopped
Handful of Blueberries
Sprinkle Cinnamon
3 Oranges Squeezed for juice

Place everything in a bowl in the order listed. Let your breakfast sit for about 5 minutes or so for the chia seeds to soak up the juice.
