Raw Breakfast


1tbl Chia Seeds
1 Banana chopped
1 Apple chopped
Handful of Blueberries
Sprinkle Cinnamon
3 Oranges Squeezed for juice

Place everything in a bowl in the order listed. Let your breakfast sit for about 5 minutes or so for the chia seeds to soak up the juice.

•   One Young Thai Coconut (Meat and Water)

•   Half an apple

•  One Banana

• Handfull of Kale

Blend everything in a high-powered blender and enjoy! How thick your smoothie is depends on how much water and meat your coconut has.

Ruth’s Chia Goodness – 88% Raw Breakfast

What a great morning so far. Woke and did my normal fresh squeezed lemon water drink. Yoga in my newly cleaned rearranged room. Elliptical for 20 minutes, and now for breakfast!

I decided to break open a young thai coconut and use the coconut water in Ruth’s Chia Goodness Cranberry Ginger Raw Cereal!! (the original flavor is 100% Raw). I have been eating this stuff for about a year now. I love it. It’s not just for breakfast. It’s an instant Raw cereal you can eat cold or hot, so it is perfect to carry around with you for when you get hungry or need a powerful pick-me up!

Cranberry Ginger Ingredients:

Chia (salvia hispanica), buckwheat, hulled hemp seeds, pumpkin seeds, currants, cranberries, org. cane sugar, ginger, celtic sea salt.

James Had a Craving for PANCAKES!!!

I was visiting my wonderful friend James Saturday morning and he had a crazy craving for pancakes. One of his favorite foods but didn’t like the low health factor they had. So we put our brains together to come up with a healthly pancake that still rocked in taste and texture. We bundled up and walked to the Bozeman Co-Op for ingredients.

We almost bought Pamela’s Gluten Free pancake mix but then we decided to make our own Gluten Free, Egg Free, Milk Free pancakes from scratch. We bought organic quinoa grain, cinnamon, baking powder, organic vanilla extract, & organic chocolate covered cacao nibs. At his house he had flax & chia seeds & bananas. Ok this is what we did:

Homemade Allergy Friendly Quinoa Pancakes!!

•  With a coffee grinder (or if you have the dry blade container for a vitamix that works great) we ground up enough Quinoa grain to make about 3 cups of flour.

•  Grind about 2 tablespoons each of Chia Seeds & Flax Seeds. This is to bind the batter together instead of using eggs & the chia seeds will give the nutritional value a boost!

•  Added a little over 1/4 teaspoon of Real Salt

•  A lot of cinnamon

•  1 teaspoon of baking powder

•  Mix all the dry ingredients until well blended

•  Add 1 teaspoon of vanilla extract

•  Enough water to make a nice semi-thick sticky batter, not runny!

•  Add 1 to 2 tablespoons of melted organic coconut oil

•  Add 2 bananas mashed

•  Add as many cacao nibbs as you want or nuts!

•  Blend well

I wish I had a picture of these. They turned out amazing. I will no longer need to buy Pamela’s GF Pancake Mix. The quinoa made the pancake texture spongy with a mild nutty flavor. I want to experiment with other grain flowers too. HEARTY & DELICIOUS!!! Yummy!!

You gotta try them.

A Soy Yogurt that’s Organic, Affordable & Yummy!!

I picked this up at my Town & Country grocery store for only a little over $3. I’ve had other brands that were organic too but I always had to add a little of something to make it taste better. Whole Soy & Co. organic soy yogurt rocks!! Vegan – Casein, Whey & Gluten Free – No Cholesterol! I had it for breakfast with sliced strawberries . . .

TinyTee Gluten Free Banana Muffins/Bread from Scratch

Delicious homemade treat made from scratch, even the flour and applesauce. Vitamix Wet and Dry Containers are needed. If you do not have a Vitamix Blender then just have your favorite Gluten Free flour and applesauce on hand. Organic is always best! If you double the recipe still only use 4 drops of stevia & slowly add salt, double the amount might be too much.

12 Muffins or 1 Bread Loaf

Prep time:
30 to 45 min to prepare. 30-60 min Baking.


  • FLOUR:
  • 3/4 c ea. of Garbonzo Beans & Rice (uncooked)
  • 1/4 tsp. Salt
  • 2 Apples Cored & Peeled
  • 1 tbl Lemon Juice
  • 1 2/3 c Gluten Free Flour
  • 2 tsp Baking Powder
  • 1 tsp + 1/4 tsp Xanthan Gum
  • 1 Egg or 1/4 c Egg Substitute
  • 1/4 c Honey + 4 Drops Stevia
  • 1/3 c Apple Juice
  • 3 Ripe Bananas
  • 1/4 c Coconut Oil
  • 1 tsp Lemon Zest
  • 1/4 c Applesauce
  • 1 tsp Cinnamon


  1. FLOUR:
    Place all beans, rice and salt in a Vitamix Dry Container.
    Set to variable 1.
    Quickly move to 10.
    Switch to high and grind for 60 sec.
    Sift 1 2/3 c freshly ground flour in a mixing bowl to remove any unground beans or rice.
    Place apples and lemon juice in Vitamix Wet Container.
    Set to Variable 1.
    Quickly move to 5.
    Mix until well blended. Set aside.
  3. Preheat oven to 350°.
    Line muffin pan with papers or grease and flour muffin pan or loaf pan.
  4. In mixing bowl with flour add baking powder, cinnamon and xanthan gum. Blend well.
  5. Place egg or egg substitute, honey + stevia drops, coconut oil, apple juice, lemon zest, bananas and applesauce into Vitamix Wet Container.
    Select variable 1.
    Turn machine on and quickly increase speed to variable 5.
    Blend for 10-15 seconds or until mixed.
  6. Pour batter into dry ingredients and mix gently by hand or with spatula to combine.
    Let rest for 5 minutes.
    Batter should be fluffy.
  7. With a large spoon scoop batter into muffin papers or pour into loaf pan.
  8. Muffins bake for 30 min and loaf for 1 hour or until toothpick inserted into the center comes out clean
