Raw Cacao (Chocolate) Pie!

This is one of my favorite desserts & it is so easy to make. This recipe is not my own creation but altered from another Raw chef.

Ingredients

RAW CACAO PIE!

Coconut Crust
•  1 1/2 cups unsweetened shredded dried coconut
•  1 1/2 cups raw macadamia nuts or raw walnuts (I usually do 1/2 walnuts & pecans)
•  1/4 teaspoon salt
•  8 pitted medjool dates, unsoaked
Chocolate Mousse
•  5 pitted medjool dates, soaked for a bit till soft
•  1/4 cup maple syrup or agave nectar + 3 drops of stevia liquid
•  1 teaspoon vanilla extract
•  2 medium size or 3 small mashed avocado
•  1/2 cup to 3/4 cup unsweetened raw cacao or carob powder (I do 1/2 & 1/2)
•  1/2 cup water ( I use the left over water I soaked the dates in)
•  Cinnamon

Slit open Medjool Dates & Remove Seeds inside. Set 8 dates to the side for the crust.

Soak 5 Dates in water for Chocolate Mousse Filling

Coconut Crust Instructions:

Place the coconut, nuts and salt in food processor with S blade and process until finely ground. You could coarsely ground the ingredients too.

Take the 8 dates you set aside & chop them up into chunks.

Add the dates and process until the mixture resembles crumbs and begins to stick together.

Grounded Up!

Put mixture in pie pan.

Press crumbs uniformly & firmly along the bottom and up the sides of the pan to form a pie crust. Place in freezer for 15 minutes.

 Chocolate Mousse Instructions:

Place the soaked dates, sweeteners and vanilla in a food processor with S blade. Save the water the dates were soaking in!

Process until smooth.

Add the avocado.

Again process until smooth.

Add Cacao & Carob Powder.

Process well. The filling will be very thick & creamy! Make sure to scrape the sides a few times while processing.

Now add 1/4 cup of the date soak water & blend.

Keep adding water a little at a time to make the filling light & fluffy but still slightly thick.

Retrieve the pie crust from the freezer and place mouse filling inside the middle of the crust.

With a spatula spread the filling evenly within the pie crust. Sprinkle with cinnamon and decorate as you like.

Now you must close your eyes to eat the first bite!

You can’t even taste the avocados! Enjoy this amazing healthy chocolate treat any time of the day!!

My friend Caroline & I will be Hosting our first RAW Dinner this Saturday January 7th! I am so excited. If it goes well I’m going to try to make it a monthly thing and change it to a Raw Potluck Gathering!. That would be awesome.

Both Caroline & I will be perparing food.

Menu:

HORS D’ OEUVRES

• Tomato & Olive Tapenade
• Fruit Salad with Goji-Orange Sauce
• Corn Chips w/ Hummus
• Kale Chips
• Lemon Nori Crackers

FIRST COURSE:

• Thai Coconut Soup
• Green Salad w/ Dressing

MAIN COURSE:

• Hearty Garden Burger Balls
• Green Quiche – my own creation
• Buckweat Grouts Pizza Crust w/ Cashew Cheese & Toppings
• Pesto Zucchini Pasta
• Tomato Basil Zucchini Pasta

SIDES:

• Curried Cabbage Salad
• Wilted Greens
• Spicy Garlic Mashed Potatoes – my creation
• Beet Salad

DESSERT:

• Apple Cranberry Tart w/ Cashew Cream
• Cacao Pie
• Cheesecake
• Truffles

CAN’T WAIT!

Well it was such a success. I believe a total of 16 people showed up to experience RAW FOOD! Here are a few snap shots. I will provide recipes for the above dishes as soon as I can.

Pesto Time!!

I created this quickly with what I had available in my kitchen. Turned out well, surprised!

I made a pesto with lemon juice, cashews, olive oil, garlic, basil & seasonings.

Spiralized angle hair zucchini pasta.

Added diced cherry tomatoes & green grapes, hemp hearts, & capers.

I couldn’t believe the flavor that burst in my mouth when i had a bite with a grape! The tomatoes & zucchini came from my garden & the rest of the ingredients are organic. This dish served it’s purpose, I AM FULL!!

Now that the weather is warmer my beans sprout in about 3 days!! Loving it!! This batch is pinto, white northern & black beans. It is amazing that we can take something non-living to a live state again. Those cute little tails are such a pure gift of health!!

Dandelion Galore!!!

Today Naya & I played & worked in the garden then picked a bunch of wild, tender Dandelions!

Behind Naya is her very own 4×4 garden bed. She loves it!! I soaked the leaves in a sink full of cold water & about 5 drops of Grapefruit Seed Extract for at least an hour. Then I put them in my  dish rack to dry before storing. They perked up nicely and we ended up with a lot more than we thought!!

Orange Dressing

Dressings are so full of crap and so expensive for the good stuff. I decided to suck it up and make a homemade dressing with my Vitamix.

•   1/4 cup Olive Oil
•   1/4 cup Apple Cider Vinegar or Rice Vinegar
•    1 tbs.  Tamari
•   2 medium Orange
(peeled & separated)
•   1/4 cup Onion
•   1 tbs. Honey + 2 drops of Stevia
•   4 fresh Garlic Cloves
•   Cayenne to taste

Place all ingredients in your blender. Blend on high for about 30-40 seconds. Always use organic when possible!!

This turned out so yummy!! Jason & I loved it!!

Sprouting Sunflower Seeds

•  Rinse a good amount (1+ cup) of Organic Sunflower Seeds w/ Shells.

•  Transfer to a glass jar and fill w/ filtered water, soak for 8-12hrs (overnight).

•  Let sprout for 3-5 days with 2 rinsings a day, until small tales start to form.

On 2/5/11 my sunflower seeds have been sprouting for about 3 t0 4 days and were now ready for soil to grow!

I rinsed my sprouts throughly and then mixed some organic potting soil w/ some organic fertilizer. Transfered mixed soil into a glass dish, then spread the sprouted sunflower seeds on top. Cover to hide from the sun until sprouts get semi tall. This could take several days.
